What can I do with over-ripened bananas?

Save 'ripe' bananas

Don't throw away those over-ripened bananas! Peel them, wrap individually in plastic-wrap and store in freezer bags until ready to use for...banana pudding or banana-nut bread!

Actually, you don't even need to peel the bananas. When they are over ripe, place the unpeeled bananas in the freezer. They will blacken. Defrost at room temperature by placing in a bowl. Peel and mash as needed for a wonderful banana bread.
